This is an easy to drink smoothie that comes together quickly to refuel you after a walk. Don’t fear the vegetables as it tastes predominantly of green apple and banana.. while still giving you the healthy benefits of all the nutrients the veggies provide! Makes 2 servings.
Ingredients
1/4 cup tightly packed fresh spinach
1/2 green apple (3oz)
1/2 cucumber (3oz)
1/2 banana, frozen (3oz)
1/4 cup unsweetened full fat Greek yogurt
1/4 cup very cold water (substitute with 2 ice cubes if using a high speed blender)
Pairing: 2 slices whole grain toast with 2 tablespoons almond butter
Instructions:
Blend all of the ingredients except for the pairing until smooth. Serve with toasted whole grain bread and almond butter for a perfect walking recovery snack.
